i made this for small group the other night, and it seemed to be a hit! this recipe is great for those that are dairy allergies (i don’t think the kids in our small group missed the dairy at all when they had it with their sundae!).
serves 8 – 10 on top of sundaes.
2 3.5 oz bars of 70% chocolate
1 C rice milk (maybe a little less, just watch for the consistency you like)
1 tsp vanilla extract
1/2 C powdered sugar or to taste
- melt chocolate using a double boiler (i just use a heat resistant bowl, and put it over a saucepan of simmering water).
- add vanilla. slowly add rice milk and powdered sugar to desired taste and consistency.
linguine with a tomato sausage sauce February 19, 2007

my friend made this for me one time, and i loved it. it’s a simple and quick recipe and very delicious.
serves 3-4
1 sweet (or hot) sausage italian link with the casing removed
1 medium onion, chopped
2 cloves garlic, minced
3 tomatoes, seeded and chopped
1/4 – 1/2 C white wine
salt
red pepper flakes (optional)
1 lb linguine
- crizzle some olive oil in a large skillet over medium to medium-high heat. brown the sausage in the pan, breaking it apart as you cook it (you want it to be meat-sauce size pieces).
- add the onions and garlic. Cook until onions are soft.
- add the tomatoes and stir for a couple of minutes. add salt and red pepper flakes to taste.
- add the wine to deglaze the pan. make sure you scrape the bits off the bottom of the pan. turn the heat to medium to medium low, and let simmer for 10 minutes while the pasta is cooking (if the sauce starts looking too dry, add some water.)
- cook and drain the pasta. add the cooked pasta to the skillet and toss together. serve and enjoy!
