soy sauce chicken March 16, 2007

this is one of my husband’s top 10 favorite dishes, and it’s pretty easy to make. the kiddos in our small group seem to love it too. :)

serves 4

marinade (this marinade could be used for pork or beef)
2/3 C soy sauce
1/4 C sugar (or to desired sweetness, amount of sugar will depend on how salty the soy sauce is)
1 C water
2 tsp seasame oil
4 green onions, cut into 2 in pieces
5 slices of ginger

2 lbs chicken (i like to use dark meat), approximately 8 chicken thighs

  1. combine marinade mixture. taste and re-season to desired taste.
  2. pour mixture into 9 X 13 pan. add chicken and cover pan with aluminum foil. let the chicken marinate at least 4 hours (preferably at least overnight), flipping halfway through.
  3. bake chicken at 350 for 1.5 hours, or until chicken is cooked all the way through flipping the chicken halfway through cooking.
