i brought this muffin to Easter breakfast at church and lots of people seem to like them. it’s from william sonoma’s essentials of baking. the muffin isn’t very sweet, and it can come out a little bit “greenish” as one of my friend’s said (i think it’s the mixture of blueberries and cornmeal).
makes 12 muffins
1 1/2 C all-purpose flour
1/2 fine-grind cornmeal (i just used a small food processor to grind up regular cornmeal)
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp nutmeg
2/3 C firmly packed brown sugar
2 eggs
1 C whole milk
6 tbsp unsalted butter, melted
1 C blueberries (fresh or frozen)
topping
2 tbsp granulated sugar
1 tsp ground cinnamon
- preheat oven to 400.
- combine flour, corn meal, baking soda, baking powder, salt, and nutmeg in a bowl. mix well.
- whisk together brown sugar, eggs, milk, and butter until well combined.
- pour liquid mixture over dry ingredients. fold together until just combined. add blueberries and fold into mixture.
- fill each up 3/4 full. sprinkle the sugar-cinnamon topping over the top.
- bake for 15-18 minutes.
