chocolate chip cookie October 16, 2007

i’m not a huge cookie fan, but when lydia made this for me the other day, i had to have the recipe! i have to limit myself to the number of cookies i eat with these! :) i love the texture of the cookie–it’s dense but chewy.

makes about 3 dozen

1/2 C butter, softened
1/2 C brown sugar
1/2 C sugar
1 egg
1/2 tbsp vanilla
1 1/4 C oatmeal flour*
1 C flour
1/2 tbsp baking powder
1/2 tbsp baking soda
1/4 tsp salt
6 oz chocolate chips (semi-sweet or milk)
2 oz bar of chocolate, chopped into chunks (semi-sweet or milk)
3/4 C nuts (optional)

* if you don’t have oatmeal flour, you can ground up oatmeal in a blender or food processor.

  1. preheat oven to 375.
  2. combine oat flour, flour, baking powder, baking soda, and salt in a bowl. mix thoroughly and set aside.
  3. in another bowl, cream butter, brown sugar, and sugar together. add the egg and vanilla and beat until combined.
  4. add the flour mixture. beat until combined. add chocolate chips, chunks, and nuts.
  5. roll dough into golf-ball size balls. place on ungreased cookie sheet so that balls are 2 inches apart. bake for 6-8 minutes.
