chocolate lava muffins February 19, 2008

here’s a chocolate muffin that is mostly chocolate, with a suggestion of flour. it’s from the tv show “good eats” (here’s a link to the recipe). what i love about this recipe is that there aren’t very many ingredients, and the ingredients that are used i have in my house almost all the time. the muffin is soft, dense, gooey, and oh so yummy. it’s not too sweet, which is something else i like about this recipe. if you’re trying to watch you eat, this isn’t the recipe for you. :P

makes 1 dozen

8 oz semisweet chocolate chips
1 stick unsalted butter
1/2 tsp vanilla extract
1/2 C sugar
3 tbsp flour
1/4 tsp salt
4 eggs
Butter, to coat muffin tin
1 tbsp cocoa powder

  1. preheat the oven to 375 degrees.
  2. place a small metal bowl over a saucepan with simmering water. melt the chocolate and butter in the bowl. stir in vanilla.
  3. in a mixing bowl, combine sugar, flour and salt. sift these into the chocolate and mix well with electric hand mixer.
  4. add eggs one at time, fully incorporating each egg before adding the next. beat at high until batter is creamy and lightens in color, approximately 4 minutes. chill mixture.
  5. coat the top and each cup of the muffin tin with butter. dust with the cocoa powder and shake out excess. spoon mixture into pan using a 4-ounce scoop or ladle. bake for 10 to 11 minutes. outsides should be cake-like and centers should be gooey.

pan fried soy sauce pork chops February 11, 2008

this recipe is from my grandma, and one of my dad’s favorites. i actually haven’t made this recipe until this past friday when we had some friends over for dinner. they really enjoyed the chops, so i figured i should post the recipe. :)

serves 4

8 thin cut boneless pork loin chops
1/3 C soy sauce
1/8 C sugar
3 cloves garlic, smashed
1 egg
flour
water

  1. combine soy sauce, sugar, and garlic in a bowl. add the pork. let the meat marinate for at least 15 minutes, preferably 1 hour.
  2. crack the egg into the bowl. mix the pork, marinade, and egg until pork is well coated.
  3. add enough flour to the bowl until each pork chop is covered in a light thin paste coating.
  4. heat a skillet on medium-low to medium heat. add enough oil to coat the bottom of the pan. fry each chop until golden brown on each side.

the gooch (a blue cheese dip) February 1, 2008

if you love blue cheese, this dip is for you. this recipe comes from my husband’s grandmother, jane. jane would make this dip for tailgating, and i think it would just be perfect (and just in time) for the super bowl! it’s a delicious dip that goes great with wheat thins, potato chips , and crackers.

this dip is best when refrigerated for 1-2 days before serving.

1, 8 oz. package cream cheese
2-3 oz. bleu cheese
1 tbsp grated onion
3-4 dashes tobasco sauce
3-4 dashes Worcestershire sauce

  1. combine all ingredients in a bowl. mix all the ingredients together until well combined (i usually use a hand mixer).
